The Best Cookie EVER!


Ok, so this is my absolute favorite cookie ever, on the entire planet!

If you know me, you know I love cookies! This recipe is WHY. For real.

I got the original recipe from my sister-in-law, Shannon, and changed a few things (made it gluten free, for one) to make it my own! It’s not healthy – at all – but it’s important to have balance and this is for sure my go-to when I decide it’s time for a treat. My kids gobble them up, and I make them almost every time we have company. Most people can’t have just one 😉 So proceed with caution.


1 c. soft margarine or butter (I use 1/2 cup Earth Balance vegan stick and 1/2 cup unsalted butter)

1/4 c. white sugar

3/4 c. brown sugar, packed

1 tsp. pure vanilla

1 package instant vanilla pudding (I use Jello, it’s gluten free and dairy free)

2 eggs

Mix and add:

2 1/2 c. flour (I use King Arthur’s GF Baking Mix, note: it’s not just flour)

1 tsp. baking soda

1-2 c. chocolate chips (I use Ghirardelli’s dark chocolate chips)

Bake at 375 for 8-10 mins, or until golden on the edges.
