I love these meals because they are so easy to mix together, bake and eat! I would double this recipe for my family and make them whole grain rice to help fill them up. For me, I stick to meat and veggies only at dinner time, so this is perfect!

Instructions
  1. 1. Preheat oven to 400 F. 2. Line large baking sheet with parchment paper; set aside. 3. Place sausage, kale, onion, bell pepper and sweet potato in a large mixing bowl; drizzle with oil and season with salt and pepper (if desired). Toss gently to distribute the oil. 4. Arrange sausage mixture on baking sheet in a single layer. Bake for 18 - 20 minutes, stirring after 10 minutes, until sweet potatoes are soft. 5. Garnish with green onion; serve immediately.
Recipe Notes

 

  • Choose any lean, precooked chicken or turkey sausage, like chicken and apple, spinach and feta, or andouille. Look for brands with less than 10g fat per sausage.
  • Instead of sausage, you can make this dish with eggs. After the veggies cook for 10 minutes, make four wells in the veggie mixture and crack eggs directly on the baking sheet. Cook until eggs are set and sweet potatoes are soft.
  • Spice up your morning by adding a dash of ground cumin, ground smoked paprika, or chili powder in step 3.
  • To make this dish vegan, sub vegan sausage, or season cubes of tofu or tempeh with the spices listed above.
