5 Favorite Summer Recipes

I’ve pulled together some of my faves that are family friendly, EASY, taste great and are good for you!

  1. FISH TACOS WITH MANGO SALSA

These can be made in a flash when you buy your fish frozen. I prefer Tilapia or fresh Walleye (if you live near fresh water, you know these are the best!). I also buy pre-shredded cabbage, so most of the work comes from dicing the mango. Easy Peasy! I have super picky eaters, so I like to make this into a taco bar of sorts and everyone can choose what they’d like on their taco.

2. PORK AND SWEET POTATO KABOBS

Again, another easy recipe. I love anything that can be grilled, that just screams summertime to me! These are great with brown rice, or if you’re cutting carbs, cauliflower rice.

3. MUSTARD CHICKEN SALAD IN A JAR

Easy to pack for work or a picnic.  A great option for making ahead and  so yummy to eat! Enough said!
